Mate is made from the green leaves of a type of holly known as yerba mate in Brazil. Naturally stimulating, mate is also known across the South American region as the ‘beverage of the gods’. This Brazilian tea is equivalent to coffee in terms of caffeine, but it doesn’t deliver the jitters.

How it tastes: Subtly sweet and smoky, with a fresh, earthy taste.
To serve one: Heat 250mls of water to 99°C. Add 1 heaped tsp of Brazilian tea, allow to infuse for 5-10 minutes
Why it’s special: With a stimulating effect that lasts longer than coffee, this invigorating tea from Brazil really hits the spot. A short infusion time concentrates the stimulating effect, while a longer one weakens it. To reduce the caffeine level, steep for 10 seconds, throw the water away and brew again as normal.
